Preparation Method :

  • Mix the crocodile meat with salt and pepper.
  • Heat a large non-stick frying pan (very hot), add the meat and dry fry for 2 minutes on each side.
  • Add the lime juice and keep it aside.
  • For preparing the sauce, melt butter in another frying pan.
  • Add the spring onions and sauté for 1-2 minutes.
  • Add the rosemary and vermouth and boil rapidly until almost dry.
  • Add the fish stock and heat it until it reduces to half of its original quantity
  • Add the cream and simmer for 2 minutes (do not boil).
  • Add salt and pepper then strain the prepared sauce into a bowl.
  • While serving, transfer the meat to the serving plate and pour the sauce over the top.
  • Serve it immediately.


  • 1.2 kg Crocodile or Alligator Meat
  • 4 tablespoon Lime Juice 
  • 4 Spring Onions, chopped 
  • 50 grams Butter 
  • 20 grams Fresh Rosemary Needles 
  • 100 ml Dry Vermouth 
  • 200 ml Fish Stock 
  • 100 ml Single Cream 
  • Salt and Black Pepper as per taste
  • 2 teaspoon Cooking Oil
