AUSSIE SEAFOOD SALAD

Preparation Time :
30 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Boil the eggs for 8 minutes and then put it in a bowl of cold water until you need them.
  • Make the dressing by mixing together the olive oil, lime juice and sweet chilli sauce in a small bowl.
  • Add the spring onions on to the dressing.
  • Remove shell of the eggs and slice into rounds.
  • Place the lettuce leaves on the serving plate.
  • Spoon the sweet corn on top of the lettuce and scatter the tomato halves on top.
  • Now add the shrimp and egg slices and top everything with the chilli dressing.
  • Serve it immediately.

INGREDIENTS

  • 4 eggs
  • 4 tablespoons Cooking oil
  • 4 tablespoons lime juice
  • 3 tablespoons sweet chilli

sauce

  • 3 spring onions, sliced diagonally
  • 1 gem lettuce
  • 400 grams sweet corn with bell peppers, drained
  • 300 grams cherry tomatoes, halved
  • 250 grams tiger shrimp, cooked and peeled
