Preparation Method :

  • Extract the meat from sausages by slitting it.
  • Make a round shaped ball with a tea spoon of meat.
  • Season with salt and pepper, then repeat the process until all the meat is used.
  • Fry meatballs over a medium heat for 5-8 minutes or until cooked through. Keep it aside
  • To prepare red wine dipping sauce melt a tablespoon of butter in a fry pan.
  • Add shallots and garlic. Cook until it becomes tender.
  • Now add the red wine and stock. Reduce the temperature when the red wine and stock mixture begins to boil and simmer it for 15-20 minutes until the volume of wine and stock had reduced to half of its original quantity.
  • Gently stir in the remaining butter.
  • Season with salt and pepper and remove from heat.
  • Serve the emu meat ball with red wine dipping sauce. 


  • 500 grams emu sausages
  • 100 ml red wine
  • 30 ml beef or veal stock 
  • 3 tablespoon butter 
  • 1 shallots, finely diced
  • 1 cloves garlic, crushed and minced
  • Salt to taste
  • Black pepper to taste
