COCONUT ICE CREAM WITH CARAMELIZED BANANAS

Preparation Method :

  • To make the Coconut Ice Cream, combine all the ice cream ingredients and either use an ice cream maker or put the mixture in the freezer, remembering to stir it regularly with a hand mixer or pulse in a food processor.
  • To make the Caramelized Bananas, peel and roughly mash the bananas. Combine the sugar, salt, peanuts and water in a saucepan and bring to a boil over medium heat.
  • Cook, stirring regularly. Once the mixture starts to caramelize, add the mashed bananas, reduce the heat and mix until the bananas are completely covered and the syrup has slightly reduced. Set aside to cool.
  • Serve a scoop of the ice cream with a spoonful of the caramelized topping.

INGREDIENTS

Coconut Ice Cream

  • 400 ml coconut milk
  • 185 ml sweetened condensed milk
  • 125 ml light cream
  • 2 tablespoons sugar

Caramelized Bananas

  • 2 ripe bananas
  • 4 tablespoons sugar
  • 1 small pinch of salt
  • 1 tablespoon chopped peanuts
