Preparation Method :

  • Soak the rice in cold water for 4 hours. Steam it for 10 minutes; taking care to let it remain slightly firm.
  • While the rice is still warm, mix it with the coconut milk, grated coconut and sugar and set it aside to cool.
  • If you're using banana leaves, wipe them with a damp cloth and cut them into squares, approximately 10 inch (25 cm).
  • Heat a small amount of water in a saucepan and steam the leaves for 3 minutes to soften them. If you're using aluminum foil, cut the foil into the size specified above.
  • Take one piece of banana leaf or aluminum foil and spread a thin layer of the sticky rice mixture on top. The layer should be approximately the size of one banana, but slightly wider.
  • Place a banana on top of the rice, then spread more rice evenly over the top. Roll up the parcel and secure the ends with wooden toothpicks.
  • Grill the cakes over medium heat, turning them regularly until the banana leaves start to turn black. Remove from the heat and set aside to cool.
  • To serve, open the banana leaves and slice the rice cakes.
