Preparation Method :

  • To make the Pork Terrine, bring a small pot of water to a boil and simmer the pork rind for 1 hour.
  • Preheat the oven to 365°F (180°C). Combine all the ingredients for the Pork Terrine in a food processor and pulse until uniformly mixed.
  • Pour the mixture into a mold or casserole dish-the dish should not be more than 2/3 full and bake for 1 ½ hours. Remove the Pork Terrine from the oven and set aside to cool. Slice into thin slices.
  • To assemble the sandwiches, cut the baguette into three pieces, then slice each piece in half lengthwise.
  • Fill the slices of bread with slices of the Pork Terrine, Pickled Vegetables, cucumber strips and coriander leaves. Serve immediately.


  • 1 French baguette
  • 80 grams Pickled Vegetables
  • 1 cucumber, peeled, halved and cut into strips
  • 1 bunch of coriander leaves

Pork Terrine

  • 200 grams pork rind, finely sliced
  • 500 grams pork tenderloin
  • 300 grams pork shoulder, chopped
  • 200 grams pork liver, chopped
  • 4 cloves garlic
  • 6 stalks lemongrass
  • 2 ½ teaspoons sesame seeds
  • 2 tablespoons fish sauce
  • 2 ½ teaspoons salt
  • 1 tablespoon sugar
