Preparation Method :

  • Heat a wok over medium-high heat and stir-fry the squid for only 20 seconds, or until they release their moisture. Remove the squid from the wok and set it aside.
  • Add the oil to the wok and stir-fry the garlic and lemongrass for a minute or two. Add the green beans, kaffir lime leaves and the green peppercorns, and stir-fry for 1 minute.
  • Return the squid to the wok and add the fish sauce and sugar and stir-fry for 1 minute more. Add the basil leaves and serve.



  • 400 grams fresh baby squid, cleaned and sliced
  • 3 tablespoons sesame oil
  • 3 cloves garlic, peeled and chopped
  • 1 stalk lemongrass, chopped
  • 200 grams green beans, trimmed and sliced
  • 5 kaffir lime leaves, finely sliced
  • 100 grams fresh green pepper-corns, cut into small clusters
  • 3 tablespoons fish sauce
  • 1 teaspoon palm sugar or dark brown sugar
  • 1 small bunch Thai basil leaves
