Preparation Method :

  • Heat a dry skillet over medium heat and fry the pork until crisp. Remove and drain on paper towels. Cook the pork liver in the rendered fat, remove it from the skillet and drain on paper towels. Slice it finely and set aside.
  • Combine the sliced pork, liver, vegetables, garlic and the herbs in a bowl and mix together.
  • Season with the fish sauce, sugar and lime juice and toss to combine. Garnish with the peanuts and sliced lime leaves and serve.


  • 200 grams pork, thinly sliced
  • 100 grams pork liver
  • 1 carrot, peeled and sliced into matchsticks
  • 1 red bell pepper, sliced into thin strips
  • 2 tomatoes, quartered, deseeded and sliced into thin strips
  • 1 small jicama, peeled and sliced into matchsticks
  • 2 cloves garlic, peeled and chopped
  • 1 small bunch coriander leaves
  • 1 small bunch mint leaves
  • 1 small bunch Vietnamese mint
  • 3 tablespoons fish sauce
  • 1 teaspoon sugar
  • Juice of 1 lime
  • 3 tablespoons unsalted roasted peanuts, coarsely chopped
  • 3 lime leaves, finely sliced
