Preparation Method :

  • Combine the honey and the salt in a small bowl and mix well. Rub the chicken with this mixture and set it aside.
  • Line a casserole dish large enough to accommodate the chicken with aluminum foil. Scatter the chopped lemongrass, kaffir lime leaves, shallots and garlic in the dish.
  • Heat briskly until the bottom starts to change color.
  • Add the chicken, reduce the heat and cover. Cook for 5 minutes, then add a little of the rice wine. Cook in the covered pan for 1 hour, turning the chicken regularly and gradually adding more rice wine.
  • Discard the lemongrass, kaffir lime leaves, shallots and garlic. Carve the chicken, place on a platter and serve with Chili Coriander Dip and Khmer Raw Vegetable, Fruit and Herb Plate.


  • 5 tablespoons honey

  • 10 small red shallots, peeled
  • 10 cloves garlic, peeled
  • 500 ml rice wine or sake
