Preparation Method :

  • Combine fruit in a bowl. Sprinkle with liqueur and stand 15 minutes; drain.
  • Divide fruit between spring roll skins. Brush edges with egg white. Roll up as for ordinary spring rolls.
  • Fry three rolls at a time in oil to cover. When golden, remove and drain well.
  • Dust with icing sugar and serve with ice cream.


  • 2 firm ripe mango, peeled and cut in 2 cm dice
  • 5 slices ripe fresh pine apple, peeled and cut in 2 cm dice
  • 2 large apple, peeled and cut in 2 cm dice
  • 4 kiwi fruit, peeled and cut in 2 cm dice
  • 4 firm bananas, peeled and cut in 2 cm dice
  • 250 gram strawberries
  • 5 teaspoon orange liqueur
  • 10 large spring roll skins
  • 2 egg white, beaten
  • Cooking oil, for frying
  • Icing sugar
  • Vanilla ice cream
