LYCHEE ICECREAM WITH MANDARIN SAUCE

Preparation Time :

30 minutes

Preparation Method :

  • Place the eggs and sugar in pan, whisk over low heat without boiling until frothy, remove from heat, place in large bowl, cool to room temperature.
  • Beat cream until firm peaks form, fold into egg mixture. Puree lychees in blender or processor, fold into cream mixture.
  • Pour into deep cake tin, cover, freeze several hours or until partly frozen. Place into large basin, beat until smooth.
  • Pour into deep cake tin, cover, freeze several hours or overnight until set.
  • Serve with Mandarin Sauce and extra mandarin oranges and lychees.
  • Mandarin Sauce: Drain mandarins, reserve a cup of syrup. Puree mandarins in food processor, transfer into a pan.
  • Stir in reserved syrup, liqueur and blended corn flour and water. Stir over heat until Sauce boils and thickens.

INGREDIENTS

  • 3 eggs
  • 100 grams castor sugar 
  • 500 ml cartons thickened cream 
  • 600 grams lychees, drained
  • 300 grams mandarin oranges 
  • 2 tablespoons mandarin liqueur
  • 1 tablespoon corn flour 
  • 1 tablespoon water
