Preparation Method :

  • Wash rice well and leave it to soak in water for 12 hours. Process rice and water in a food processor to form a very fine paste (at least 10 minutes).
  • Put white radish into a large, thick bottomed pan and gently stir-fry without oil until the radish is soft-about 4 minutes. Add rice paste and turn the heat very low.
  • Bring mixture to boil, stirring all the time to prevent it from sticking to bottom of pan, then remove from heat and season with salt and pepper.
  • Line a small bamboo steamer or a 20 cm cake tin with a wet tea towel and pour rice and radish mixture into it.
  • Steam over fast-boiling water for 30-45 minutes. When it is cooked a skewer inserted into the center will come out clean.
  • Turn out onto a plate, peel off the cloth and cut into slices with a wet knife.


  • 500 grams raw long-grain rice
  • 750 grams white radish, peeled and coarsely grated
  • 4 teaspoon salt
  • 2 teaspoon black pepper
