Preparation Method :

  • Heat oil in a wok. Add salt, shallots, peas and bean curd. Stir fry 1 minute. Pour in eggs.
  • Cook over medium heat until mixture begins to set.
  • Draw outer edges to the center until eggs form a scrambled egg consistency, moist and retaining shape.
  • Sprinkle with soy sauce before serving.


  • 4 tablespoons Cooking oil
  • 1 teaspoon salt
  • 4 shallots, finely chopped
  • 100 grams peas, blanched in boiling water 1 minute
  • 200 grams bean curd cut in 1 cm dice
  • 10 eggs, beaten
  • 2 tablespoons light soy sauce
