CHICKEN WITH WALNUTS

Preparation Time :
30 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Cut chicken into 1 ¼ " x ½ " strips.
  • Beat egg white and mix salt, soya sauce and cornflour. Add chicken to this. Stir. Leave to stand.
  • Place shelled walnut halves in a bowl. Pour in boiling water to cover them and leave for 5 minutes. Remove from water & dry well.
  • Heat ½ cup oil in a wok or a kadhai and stir fry the chicken pieces for 10 minutes. Remove from oil and set aside.
  • Fry walnuts in the remaining hot oil until golden brown. Drain and keep aside.
  • Stir in 2½ tablespoon sugar in the remaining oil and stir over moderate heat until all the sugar has dissolved.
  • Stir in the garlic-chilli paste with the remaining sugar.
  • Add sesame oil, chicken and walnuts. Mix well and serve hot.

INGREDIENTS

  • 750 grams boneless chicken pieces or breasts of chicken
  • 1 egg white
  • 1 teaspoon salt
  • 1 tablespoon soya sauce
  • 2½ tablespoons cornflour
  • 200 grams shelled walnuts
  • 50 grams sugar
  • 1 tablespoon Sesame oil
  • Cooking oil for frying

Garlic Chilli Paste

  • 12 flakes garlics
  • 6 dry, red chillies
  • 1 teaspoon salt
  • 50 ml vinegar
