LYCHEE CHICKEN

Preparation Method :

  • Cut the chicken meat into ½ " thick and 1" long pieces.
  • To prepare the batter, beat sesame seed oil into the eggs. Add salt, sugar & cornflour.
  • Add chicken pieces to the batter, stir and marinate for 30 minutes.
  • Heat oil. Fry chicken pieces for 4 - 5 minutes. Keep aside.
  • Heat 3 tablespoon oil in a wok. Stir fry onions and capsicums.
  • Add all the other ingredients of the sauce, except cornflour.
  • Add lychees. Cook until the liquid has reduced a little.
  • Add cornflour paste, stirring continuously. Cook till the sauce turns thick.
  • Add the fried chicken pieces to the sauce. Serve hot.

INGREDIENTS

  • 1 kg boneless chicken - cut into 1" x ½ " pieces
  • 10 lychees (fresh or canned)
  • 1 medium sized onion - sliced finely
  • 1 capsicum (green) - sliced finely
  • 1 red capsicum - sliced finely
  • Cooking oil for frying

Batter

  • 1 tablespoon Sesame oil
  • 1 lightly beaten egg
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 60 grams cornflour  

Sauce

  • 3 tablespoons sugar
  • 3 tablespoons tomato ketchup
  • ½ teaspoon salt, a pinch of pepper powder
  • 1½ tablespoon Worcestershire sauce
  • 1 tablespoon vinegar
  • 1½ tablespoon cornflour - dissolved in 50 ml water
