Preparation Method :

  • Clean and wipe chicken. Fry pepper corns and salt for 1 minute in a wok. Rub into chicken and allow to stand for 2 hours.
  • Bring water to the boil in a large pan. Add shallots, ginger, star anise, cinnamon and soy sauce and simmer 10 minutes.
  • Add chicken and cook for 10 minutes over low heat, turning once. Remove chicken and allow to cool.
  • Put sugar, flour and tea leaves in a wok, and cover with a rack. Sit chicken on its side on rack.
  • Cover tightly and smoke for 45 minutes to 1 hour, over a low heat, turning chicken half way through.
  • Remove chicken from wok and brush with sesame oil; cool.
  • Chop Chinese style and arrange on a platter. 


  • 2 kg chicken
  • 4 tablespoons brown peppercorns
  • 2 tablespoons salt
  • 3 liters water
  • 6 shallots
  • 6 slice fresh ginger root
  • 4 whole star anise
  • 2 cinnamon stick
  • 500 ml soy sauce
  • 250 grams sugar
  • 100 grams plain flour
  • 100 grams dry tea leaves
  • 2 tablespoons Sesame oil
