Preparation Method :

  • Preheat oven to 180°C (350°F).
  • Arrange chicken in an ovenproof dish. Combine plum sauce, vinegar, stock, sherry and ginger and pour over chicken. Cover and bake 40 minutes.
  • Add vegetables, return to oven and cook a further 15 minutes. Remove chicken and vegetables to a heated serving dish.
  • Thicken remaining liquid with blended corn flour and water. Bring to the boil and simmer 2 minutes.
  • Pour over chicken.
  • Sprinkle with sesame seeds and serve hot with Chinese rice.


  • 2 kg chicken, jointed
  • 5 tablespoons plum sauce
  • 2 tablespoons vinegar
  • 1 liter chicken stock
  • 100 ml dry sherry
  • 2 tablespoons finely chopped fresh ginger root
  • 2 onions, quartered
  • 250 grams canned straw mushrooms
  • 4 stalks celery, sliced
  • 300 grams canned water chestnuts
  • 300 grams canned bamboo shoots, drained and sliced
  • 4 tablespoons corn flour blended with water
  • 2 tablespoons sesame seeds
