Preparation Method :

  • Boil the eggs for 5 minutes. Drain, and pour cold water over them. Leave 5 minutes. Drain again, and shell.
  • In a saucepan, mix together the remaining ingredients. Bring the mixture to simmering point, and carefully put in the eggs. Leave the eggs over very low heat 2 minutes, turning them after 1 minute.
  • Take the pan from the heat, and leave the eggs in the sauce mixture for 4 hours, turning them several times so they colour evenly.
  • Cut the eggs into quarters for serving.


  • 8 eggs
  • 200 ml tamari or shoyu sauce
  • 100 ml water
  • 1 teaspoon dark brown sugar
  • ΒΌ teaspoon sea salt
  • 2 tablespoons Sesame oil
