TEA EGGS

Serves :

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Hard boil the eggs for 10 minutes. Drain, and cool slightly. Tap the eggs all over with the back of a teaspoon, making a network of cracks all over them.
  • Return the eggs to the saucepan. Cover with fresh water. Add the remaining ingredients. Bring the eggs to a boil. Cover and simmer 1 hour. Cool the eggs in the liquid for 2 hours.
  • Peel the eggs just before serving. They should be patterned with a brown marbling.

INGREDIENTS

  • 8 eggs
  • 1 teaspoon sea salt
  • 1 whole star anise
  • 3 tablespoons tamari or shoyu sauce
  • 1 tablespoon China tea leaves
