FISH IN GARLIC SAUCE

Preparation Time :
25 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Prepare egg batter by mixing all the ingredients of the batter together to a dropping consistency.
  • In a wok heat oil. Dip fish in egg batter and deep fry till golden brown. Keep aside.
  • In a frying pan heat 2 tablespoon oil. Reduce heat. Add dried red chillies.
  • Add garlic & ginger. Fry for a min. Add tomato puree, ketchup & stock.
  • Bring to a boil and cook for 2 - 3 minutes. Add soya sauce, sherry, salt, aji-no-moto & sugar.
  • Mix cornflour in water and add to the sauce, stirring continuously. Bring to a boil.
  • Add fish, cook for 2 - 3 minutes. Garnish with spring onions. Serve hot.

INGREDIENTS

  • 250 grams fish - cut into 1" square pieces
  • Cooking oil for frying
  • 2 tablespoons Cooking oil
  • 1 tablespoon chopped garlic
  • 1 teaspoon chopped ginger
  • 3 dry broken red chillies
  • 100 grams tomato puree prepared by blending tomatoes
  • 100 grams tomato ketchup
  • 200 ml chicken stock
  • 2 teaspoons soya sauce
  • 1 teaspoon sherry
  • ¼ teaspoon salt
  • ¼ teaspoon sugar
  • ¼ teaspoon ajinomoto
  • 4 teaspoons cornflour - dissolved in 50 ml water

Egg Batter

  • 1 egg
  • 1½ tablespoons flour
  • 1½ tablespoons cornflour
  • 100 ml water
  • salt - to taste
