SCALLOPS WITH CORIANDER

Preparation Time :
30 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Devein scallops. Cut shallot and ginger into thin strips.
  • Heat half of the stock in pan, add scallops, simmer for 1 minute or until scallops are just cooked; drain.
  • Blend corn flour with remaining stock in pan, add shallot, ginger, coriander, chilli, garlic and sugar, stir until sauce boils and thickens.
  • Divide scallops between scallop shells or small serving dishes, top scallops with hot sauce, serve immediately.

INGREDIENTS

  • 250 grams scallops 
  • 1 green shallot 
  • 3 cm piece fresh ginger 
  • 150 ml chicken stock
  • 1 teaspoon corn flour
  • 2 teaspoons chopped fresh coriander 
  • ¼ teaspoon chopped fresh red chilli 
  • 1 clove garlic, crushed
  • ¼ teaspoon sugar
