Preparation Method :

  • Clean and slice fish, leaving head and tail intact. Score, rinse under cold running water and drain.
  • Bring water to the boil. Add shallots, ginger, sherry, soy sauce and oil to the water, and return to boil.
  • Place fish on a skimmer and lower into the boiling liquid. Reduce heat, cover and simmer gently 5 minutes.
  • Turn off heat completely and leave, covered, for 20 - 25 minutes.
  • Remove the fish carefully sliced shallots, red ginger and soy sauce.
  • Heat remaining oil with sesame oil until sizzling, and pour over fish.


  • 1½ kg whole fish
  • 2 liters water
  • 4 shallots cut in large pieces
  • 4 thin slices fresh green ginger root, finely chopped
  • 4 tablespoons sherry
  • 2 tablespoons soy sauce
  • 6 tablespoons Cooking oil
  • 8 shallots, sliced finely
  • 4 slices red ginger, finely sliced
  • 4 tablespoons soy sauce
  • 3 teaspoons Sesame oil
