WHOLE FISH IN BLACK BEAN SAUCE

Preparation Method :

  • Score fish on both sides. Season lightly with salt, then coat with flour.
  • Heat oil in a pan. Add fish and fry on both sides until golden. Remove to serving plate and keep hot.
  • Pour off excess oil from pan. Reheat; add ginger, garlic and beans, stir-fry 1 minute.
  • Stir in sherry, soy sauce, sugar and stock. When boiling, stir in blended corn flour and water to thicken.
  • Add shallots. Spoon over fish and garnish with capsicum.
  • Serve sprinkled with sesame seeds.

INGREDIENTS

  • 1 kg whole fish, cleaned and scaled
  • 1 teaspoon salt
  • 2 tablespoons plain flour
  • 200 ml Cooking oil
  • 1 teaspoon chopped fresh ginger root
  • 1 teaspoon black beans, chopped
  • 4 teaspoons dry sherry
  • 4 teaspoons soy sauce
  • 1 teaspoon sugar
  • 500 ml fish stock or water
  • 4 teaspoons corn flour blended with water
  • 4 medium shallots, chopped
  • 2 tablespoons shredded red capsicum, blanched 1 minute in boiling water
