MIXED FRIED RICE

Preparation Method :

  • Heat oil in a wok over moderate heat.
  • Pour the beaten egg. Stir and add cooked rice. Sprinkle soya sauce and salt. Keep hot.
  • Cut the vegetables into 1" even sized pieces.
  • Heat oil. Add garlic and ginger. Fry for a minute.
  • Add carrots, sprouts, capsicum, cabbage, mushrooms, lettuce and chicken. Stir fry for 2 - 3 minutes.
  • Add sugar; ajionomoto, pepper, salt and stock. Add soya sauce & sherry. Boil for 1 - 2 minutes.
  • Add cornflour paste. Stir well till it thickens. Remove dressing from fire.
  • Arrange the hot rice on a serving plate and spoon the dressing on top.

INGREDIENTS

  • 50 ml Cooking oil
  • 500 grams boiled rice
  • 1 tablespoon soya sauce
  • salt to taste
  • 1 egg, beaten
  • ¼ teaspoon pepper powder

  • 1 small cabbage
  • 2 carrots
  • 1 capsicum
  • 4 mushrooms - halved
  • 200 grams boneless chicken cubes - boiled
  • 100 grams bean sprouts
  • 10 spinach leaves or 1 firm head lettuce

Dressing

  • 4 flakes garlic - crushed
  • 2 slices fresh ginger - grated
  • 1 teaspoon sugar
  • 1 teaspoon ajinomoto  
  • 1¼ teaspoon pepper
  • 1¼ teaspoon salt
  • 200 ml stock
  • 1 tablespoon sherry
  • 1 teaspoon soya sauce
  • 3 tablespoons cornflour - dissolved in 100 ml water
