CELLOPHANE BEEF

Preparation Method :

  • Chili beef and cut into 18 thin slices.
  • Combine garlic, soy sauce, sherry, sugar, pepper and oil. Add beef and stir to coat. Marinate 1 hour. Discard marinade.
  • Arrange cellophane sheets in diamond shape. Brush each sheet lightly with sesame oil. Place one slice of carrot, snow pea and onion in center of lower half of paper.
  • Top with one slice of beef. Fold up lower corner to cover beef. Fold left and right corners to center.
  • Fold lower section up once more to center line. Fold op corner down like an envelope and tuck in securely. Repeat until all the packages are made.
  • Heat oil to 150°C (300°F). Deep- fry a few envelopes at a time for 5 minutes.
  • Drain well and arrange three envelopes each on six plates of shredded lettuce.
  • Each diner breaks open the envelopes with chopsticks and eats the contents from the paper.

INGREDIENTS

  • 250 grams beef fillet
  • 18 x 15 cm squares cellophane paper
  • 2 tablespoons Sesame oil
  • 25 thin rings of carrot, parboiled
  • 10 snow peas, stems removed, cut into thirds
  • 2 medium onions, finely chopped
  • Cooking oil, for deep-frying
  • Shredded lettuce, to serve

Marinade

  • 1 teaspoon chopped garlic
  • 5 tablespoons soy sauce
  • 2 tablespoons dry sherry
  • 1 teaspoon sugar
  • 1 teaspoon pepper
  • 2 tablespoons Cooking oil
