Preparation Method :

  • Prick skin side of pork belly and rub salt into skin. Mix sugar, soy and hoisin sauces and ginger and rub into meat side.
  • Place meat, rind side up, on a rack under a preheated griller and grill 15-20 minutes or until rind is crisp and brown.
  • Place meat, rind side up, on a rack over a baking dish containing water.
  • Roast in a preheated oven at 180°C (350° F) for about 1 hour or until cooked when tested.
  • Let cool to room temperature.
  • Garnish with watercress and tomato roses.


  • 1½ kilograms belly of pork
  • 2 teaspoons salt
  • 2 tablespoons brown sugar
  • 5 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon grated fresh ginger root
  • Watercress (optional)
  • Tomato roses
