Preparation Method :

  • The meat at 5 cm intervals so that it will hold its shape while cooking.
  • Heat oil in a wok. Brown beef on all sides over high heat. Add remaining ingredients.
  • Bring liquid to a boil over high heat. Reduce heat, cover the wok and simmer for 1½ hours, turning beef every 30 minutes.
  • Slice beef and serve hot or cold with some of the sauce.


  • 1½ kg piece topside steak
  • 5 tablespoons Cooking oil
  • 2 clove garlics, crushed
  • 4 thin slices fresh ginger root, finely chopped
  • 250 ml soy sauce
  • 100 ml sherry
  • Water to cover
  • 4 whole star anise
  • 2 small piece cinnamon sticks
