Preparation Method :

  • Place rice in a bowl, cover with water and soak for 1 - 1½ hours. Drain well and spread out on a tray to dry.
  • Combine steak, shallots, ginger, water chestnuts, egg, soy sauce and sherry; mix until well blended.
  • Form mixture into balls about 4 cm in diameter.
  • Roll each ball in rice until completely covered. Place balls on green vegetables in a steamer basket, leaving enough space between so they don't touch each other.
  • Place in a steamer and steam for 30 minutes over gently boiling water.
  • Serve with soy and chili sauces for dipping.


  • 300 grams uncooked rice
  • 1 kilogram topside steak, minced
  • 5 shallots, finely chopped
  • 2 teaspoons finely chopped fresh ginger root
  • 4 water chestnuts, finely chopped
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 4 teaspoons sherry
  • Green vegetable leaves
  • Soy sauce and chili sauce, to serve
