STEAMED PORK

Preparation Time :
50 minutes

Cooking Time :
3 hours

Preparation Method :

  • Cut pork into 8 cm squares. Place in a wok with water and bring to the boil. Remove scum from water.
  • Cover and simmer 30 minutes. Add shallots, soy sauce, sherry and ginger. Cover and simmer for a further 1½ hours.
  • Remove pork from stock and place, skin side down, in a shallow heatproof dish.
  • Sprinkle with sugar, place in a steamer and steam over gently boiling water 45 minutes.
  • Add cabbage to stock and simmer 10 minutes. With a slotted spoon, transfer cabbage to a serving plate.
  • Top with pork, skin up.
  • Serve with a dipping sauce.

INGREDIENTS

  • 1½ kilogram pork loin, with rind
  • 2 liters water
  • 10 shallots cut in 2 cm pieces
  • 100 ml soy sauce
  • 4 tablespoons sherry
  • 2 thin slice fresh ginger root, finely chopped
  • 1 bunch Chinese cabbage, shredded 
  • 2 tablespoons corn flour blended with
  • 5 tablespoons water
