SZECHWAN PORK

Preparation Time :
2 hours 20 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Place ribs in a pan, add water, cover and bring to a boil. Cook for 30 minutes. Drain well.
  • Combine ginger, sugar, soya sauce, sherry & five spice powder. Add ribs and marinate for 2 hours.
  • Heat oil. Deep fry ribs until golden. Drain well. Keep aside.
  • To prepare the sauce heat oil in a pan. Add the broken red chillies. Add capsicum, ginger, garlic and onion. Fry for 1 - 2 minutes.
  • Add sherry, sugar, ketchup and vinegar. Simmer for 15 minutes.
  • Add ribs, stirring to coat. Serve hot.

INGREDIENTS

  • 1 kg pork ribs cut into 1 inch squares
  • 2 teaspoons chopped ginger
  • 3 tablespoons brown sugar
  • 3 tablespoons soya sauce
  • 2 tablespoons sherry
  • ½ teaspoon five spice powder
  • 200 ml Cooking oil

Szechwan Sauce

  • 50 ml Cooking oil
  • 2 - 3 dry, red chillies - broken into bits
  • 3 red or green capsicums - chopped into ½ " pieces
  • 2 teaspoons chopped garlic
  • 2 teaspoons chopped ginger
  • 2 spring onions - chopped
  • 2 tablespoons sugar
  • 2 tablespoons sherry
  • 75 ml tomato ketchup
  • 75 ml vinegar
