Preparation Method :

  • Pour boiling water over bean sprouts and let stand 20 seconds
  • Refresh in cold running water, drain and dry. Heat oil in wok. Add ginger and stir fry 30 seconds.
  • Add capsicum, onion and shallots and stir fry 1½ minutes. Add bean sprouts and ham and stir-fry 30 seconds.
  • Add combined stock and sherry and bring to the boil.
  • Remove from heat and serve.


  • 500 grams bean sprouts
  • 4 tablespoons Cooking oil
  • 2 thin slice fresh ginger root, finely chopped
  • 1 green capsicum, sliced 
  • 1 green onion cut in wedges
  • 20 shallots, sliced
  • 4 thin slices ham, shredded
  • 4 tablespoons chicken stock combined with
  • 1 tablespoon sherry
