Preparation Method :

  • Cut beef across the grain into thin strips. String celery if necessary, and then slice diagonally.
  • Combine sherry, soy sauce, sesame oil and corn flour in a bowl. Add beef and toss to coat. Stand about 10 minutes.
  • Heat half the oil in a wok. Add beef and stir-fry, in two batches, for 3 minutes each. Remove beef and keep warm.
  • Heat remaining oil in the wok, add celery and stir-fry for 1 minute. Add chicken stock and simmer for 2 - 2½ minutes.
  • Return beef to wok and heat through. Blend remaining corn flour with water, add to and stir until thickened.


  • 1 kg rump steak, trimmed
  • 1 bunch celery
  • 4 tablespoons sherry
  • 4 tablespoons soy sauce
  • 1 teaspoon Sesame oil
  • 5 teaspoons corn flour
  • 6 tablespoons Cooking oil
  • 250 ml chicken stock
  • 4 tablespoons water
