Preparation Method :

  • Place lobster on its back on a chopping board. Chop with a heavy cleaver down its entire length.
  • Chop tail into 5 cm pieces. Cut legs in half and chop each claw into 3 pieces.
  • Heat oil in a wok. Stir in garlic and ginger. Add lobster and stir-fry for 2½ minutes until shell is bright red and lobster meat is white and opaque. Remove lobster.
  • Combine soy sauce, sherry, sesame oil and pork. Stir-fry for 2 minutes or until pork has lost any trace of pink. Return lobster to wok.
  • Add chicken stock and heat to boiling point. Stir in egg and stir-fry 30 seconds.


  • 1½ kg green (uncooked) lobster
  • 5 tablespoons Cooking oil
  • 2 clove garlics, crushed
  • 2 thin slice fresh ginger root, finely chopped
  • 4 tablespoons soy sauce
  • 2 tablespoons sherry
  • 1 teaspoon Sesame oil
  • 250 grams lean pork, minced
  • 6 tablespoons chicken stock
  • 2 eggs, beaten
