STIR-FRIED MANGETOUT (SNOW PEAS) WITH WATER CHESTNUTS

Preparation Time :

15 minutes

Preparation Method :

  • Top and tail the peas. Drain and thinly slice the water chestnuts.
  • Heat the oil in a wok or large frying pan over high heat. Put in the peas, water chestnuts and garlic, and stir-fry 2 minutes. Remove the garlic.
  • Pour in the wine or sherry and tamari or shoyu sauce. Lower the heat and stir-fry a further 2 minutes.

INGREDIENTS

  • 500 grams mangetout peas
  • 250 grams tin water chestnuts
  • 2 garlic cloves, peeled and left whole
  • 4 tablespoons Chinese rice wine or dry sherry
  • 2 tablespoons tamari or shoyu sauce
