CHINESE MIXED VEGETABLES

Makes :
6 cups

Preparation Time :
40 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Wash all vegetables; drain, spread on absorbent paper on wire rack to dry. Place vegetables in a large jar.
  • Dissolve salt in boiling water, add ginger, peppercorns, cold water and gin, mix well; pour over vegetables, make sure the vegetables are completely covered.
  • Stand vegetables at least 5 days before using.

INGREDIENTS

  • ¼ cabbages, small pieces
  • 2 carrots , into sticks
  • 2 cucumbers, discard seeds and cut into thick strips
  • 150 grams piece  broccoli, into small florets
  • Salt to taste
  • 200 ml boiling water
  • 3 cm piece fresh ginger, sliced
  • 1 tablespoon black peppercorns
  • 1 ¾ litres cold water
  • 2 tablespoons gin
