Preparation Method :

  • Mix the white cabbage with the tomatoes, green beans, prawns (shrimp), three-quarters of the paw-paw (papaya) and half of the chilies in a large mixing bowl.
  • Stir in two-thirds of the crushed peanuts and mix well.
  • Line the rim of a large serving plate with the lettuce or spinach leaves and pile the salad mixture into the centre of the leaves.
  • To make the dressing, beat the lime juice with the fish sauce and add sugar and pepper to taste. Drizzle over the salad.
  • Scatter the top with the remaining paw-paw (papaya), chilies and crushed peanuts.
  • Serve at once.


  • 500 grams white cabbage, finely shredded
  • 4 tomatoes, skinned, seeded and chopped
  • 500 grams cooked green beans, halved if large
  • 200 grams peeled prawns (shrimp)
  • 2 paw-paw (papaya), peeled, seeded and chopped
  • 4 fresh red chilies, seeded and very finely sliced
  • 100 grams roasted salted peanuts, crushed
  • Lettuce or baby spinach leaves, shredded or torn into small pieces


  • 8 tablespoons lime juice
  • 4 tablespoons fish sauce
  • Sugar, to taste
  • Pepper
