Preparation Method :

  • Cover chicken breast with cold water in a pan. Bring to the boil. Remove from heat and let stand 8 minutes.
  • Repeat cooking and standing time once more. Drain chicken, reserving liquid. Remove skin and bones and shred chicken meat into fine strips.
  • Heat oil. Add vermicelli in small amounts which will puff up instantly. Turn with tongs and avoid coloring.
  • Remove and drain. Lightly crush vermicelli with hands. This step can be done in advance.
  • Blanch bean sprouts in boiling chicken liquid. Refresh in cold water and drain.
  • Combine chicken, vermicelli and bean sprouts on a serving platter. Set aside to chill.
  • Combine dressing ingredients.
  • Pour over salad and toss just before serving. 


  • 1 kg chicken breast
  • Cooking Oil for deep frying
  • 100 grams vermicelli, cut in 5 cm lengths
  • 500 grams bean sprouts, root removed


  • 1 teaspoon salt
  • 4 teaspoons sugar
  • 4 teaspoons white vinegar
  • 4 teaspoons ginger wine
  • 1 teaspoon chili oil or sauces
  • 2 tablespoons Sesame Oil
