BEAN CURD AND VEGETABLE SOUP

Preparation Time :
20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Bring stock to the boil. Add tomato and mushrooms and simmer for 3 minutes.
  • Add sprouts, bean curd and seasonings. Simmer covered for 2 minutes.
  • Garnish with shallots. 

INGREDIENTS

  • 2 liters vegetable stock
  • 2 ripe tomato, skinned, seeded and cut in 1 cm dice
  • 10 button mushrooms, sliced
  • 100 grams bean sprouts, root removed
  • 200 grams bean curd, sliced
  • Salt and pepper
  • 2 shallot, finely chopped
