Preparation Method :

  • Heat oil in wok. Add ginger and crab-meat, stir - fry 2 minutes. Add stock, sherry and sweet corn.
  • When boiling, stir in blended corn flour and water to thicken. Remove from heat.
  • Pour in egg white in a thin stream.
  • Garnish with shallots. 


  • 2 tablespoons Cooking oil
  • 1 teaspoon chopped fresh ginger root
  • 2 liters fish stock, seasoned
  • 2 tablespoons dry sherry
  • 500 grams crabmeat, flaked
  • 250 grams sweet corn
  • 2 tablespoons corn flour blended with
  • 4 tablespoons stock or water
  • 4 eggs whites, lightly beaten chopped shallots, to garnish
