CREAM OF CRAB SOUP

Preparation Time :
30 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Bring stock to the ball. Add crabmeat, sherry and blended corn flour and stock.
  • Simmer 3 minutes. Add seasonings and sesame oil.
  • Beat egg whites until frothy, then fold in cream. Lightly stir into soup and remove from heat.
  • Garnish with shallot. 

INGREDIENTS

  • 2 liters fish stock
  • 200 grams crab meat
  • 2 tablespoons corn flour blended with
  • 4 tablespoons stock or water 
  • Salt and pepper
  • 1 teaspoon Cooking oil
  • 4 eggs whites
  • 5 tablespoons cream
  • 2 shallot, finely chopped
