EGG FLOWER SOUP

Preparation Time :
10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Boil the stock in a sauce-pan.
  • Add the soy sauce and seasoning (salt and white pepper).
  • Remove it from the fire and then pour the egg through the tines of a fork from several inches above the pot in a very slow stream (this will set in strands which look like flowers.) Begin stirring as soon as the egg is poured. Stir it in one direction only for 1 minute.
  • In a serving bowl first place the chopped spring onions and then sprinkle the sesame oil.
  • Lastly add the soup and serve immediately.

INGREDIENTS

  • 15 spring onions (thinly sliced)
  • 2 teaspoons Cooking oil
  • 2 tablespoons soy sauce
  • 2 eggs (lightly whisked)
  • 2 litres chicken stock
  • Salt to taste
  • White pepper to taste
