SHARK FIN SOUP

Preparation Time :
30 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Bring chicken stock to the boil. Add shark's fin and return to the boil. Add chopped cooked chicken.
  • Combine soy sauce, sherry, salt, pepper, corn flour and water. Stir into soup. Simmer 5 minutes.
  • Remove soup from heat. Pour in egg slowly, which will cook and rise to the surface.
  • Pour soup into serving bowl.
  • Garnish with ham and shallots. 

INGREDIENTS

  • 2½ liters chicken stock
  • 500 grams canned shark's fin
  • 300 grams chicken, steamed and finely chopped
  • 4 teaspoons light soy sauce
  • 4 teaspoons dry sherry
  • Salt and pepper
  • 4 teaspoons corn flour
  • 2 tablespoons water
  • 2 eggs, lightly beaten
  • 100 grams minced ham
  • 4 shallots, finely chopped
