SHORT SOUP

Cooking Time :
40 minutes

Preparation Method :

  • Mix pork, prawn, shallots, eggs, salt, soy sauce, sugar, sesame oil together. Place a teaspoon of filling onto a wonton skin. Moisten edges with egg white.
  • Fold skin in half to form a triangle, pressing edges to seal. Fold the corners of the long edge together and fasten with egg white.
  • Repeat until all wonton skins are filled.
  • Drop dumplings into boiling salted water and cook for 5 minutes; drain.
  • Place four dumplings into each bowl. Cover with boiling stock and sprinkle with shallots.

INGREDIENTS

  • 30 wonton skins
  • 2 eggs white, beaten
  • 2 liters boiling salted water
  • 2 liters boiling chicken stock
  • 4 shallots, finely chopped

Filling 

  • 350 grams pork, minced
  • 350 grams prawn meat, chopped
  • 4 shallots, finely chopped
  • 3 eggs, beaten
  • 1 teaspoon salt
  • 6 teaspoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon Cooking oil
