Preparation Method :

  • Place eggs in a pan and cover with cold water. Bring to the boil. Reduce heat and simmer 5 minutes.
  • Remove, drain and run cold water over them for several minutes. Dry eggs and tap shells gently with back of spoon on all sides to crack them evenly.
  • Place boiling water in a saucepan with the tea leaves, salt and star anise. Add eggs, cover and simmer gently for 1 ½ hours.
  • Let eggs cool in the flavored water ½ hour. The eggs may be made in advance but do not shell them until ready to serve. Shell under cold water.
  • Serve halved or quartered as an appetizer.


  • 8 eggs
  • 4 tablespoons dry tea leaves
  • 2 teaspoons salt
  • 4 cloves star anise
