Preparation Method :

  • Drain mushrooms, remove stems and chop mushroom caps finely. Very finely chop water chestnuts, bamboo shoots and shallots. Drain and flake crab.
  • Heat oil in a wok and stir-fry pork until golden. Stir in mushrooms, water chestnuts, bamboo shoots, shallots and crab. Cook 1 minute.
  • Combine sesame oil, soy sauce, oyster sauce and sherry and stir into the mixture.
  • Place the mixture into the canter of each lettuce leaf. Fold in the ends of the lettuce leaf and roll up to form a neat parcel.
  • Generally, meat filling and lettuce leaves are served separately, guests fill and roll their own lettuce leaves.


  • 50 grams Chinese mushrooms, soaked in warm water 20 minutes
  • 75 grams water chestnuts
  • 100 grams bamboo shoots
  • 5 shallots
  • 300 grams canned crab
  • 4 teaspoons Cooking Oil
  • 200 grams minced pork
  • 2 teaspoons Sesame Oil
  • 4 teaspoons soy sauce
  • 2 teaspoons oyster sauce
  • 2 tablespoons sherry
  • 2 lettuce, washed and dried
