Preparation Method :

  • Combine filling ingredients in a bowl. Arrange spring roll wrappers in diamond shapes with the point towards you. Brush edges lightly with beaten egg.
  • Place a small amount of filling onto the lower half of each skin. Fold lowest point of skin over filling.
  • Fold left and right points into center. Brush with egg. Roll up firmly and allow to stand on sealed edge.
  • Heat oil for deep-frying. Add three-four rolls at a time. Cook until golden; drain on absorbent kitchen paper.
  • Serve with sweet and sour sauce as dip.



  • 500 grams boneless white fish, sliced 
  • 200 grams green (uncooked) prawn meat, sliced 
  • 200 grams seafood sticks, sliced 
  • 200 grams bean sprouts, root removed
  • 4 shallots, chopped
  • 2 teaspoons white wine
  • 2 teaspoons IDHAYAM MANTRA peanut oil
  • 2 teaspoons light soy sauce
  • 1 teaspoon chopped ginger
  • 2 eggs white, lightly beaten
