Preparation Method :

  • Wash and dry the fish. Mix the coriander (cilantro) with the garlic, lemon or lime zest and salt and pepper to taste.
  • Spoon into the fish cavities.
  • Brush the fish with a little oil, season well and place each fish on a double thickness sheet of baking parchment or foil and wrap up well to enclose. Alternatively, wrap in banana leaves.
  • Place on a baking tray (cookie sheet) and bake in a preheated oven for about 25 minutes or until the flesh will flake easily.
  • Meanwhile, melt the butter in a small pan. Add the ginger and mix well.
  • Stir the light soy sauce into the saucepan.
  • To serve, unwrap the fish parcels, drizzle over the ginger butter.
  • Garnish with coriander (cilantro) and lemon or lime wedges.


  • 500 grams whole trout or mackerel, gutted
  • 8 tablespoons chopped fresh coriander (cilantro)
  • 10 garlic cloves, crushed
  • 4 teaspoons grated lemon or lime zest
  • 4 teaspoons IDHAYAM sesame oil
  • Banana leaves, for wrapping (optional)
  • 150 grams butter
  • 2 tablespoons grated ginger root
  • 2 tablespoons light soy sauce
  • Salt to taste
  • Pepper
  • Coriander (cilantro) sprigs and lemon or lime wedges, to garnish
