Preparation Method :

  • Combine beans, black peppers, garlic, salt, light soy sauce, dry sherry. Cut each melon in half lengthways.
  • Scoop out seeds and pulp with a spoon. Place filling in center of melon.
  • Arrange melon pieces cut side up in a heatproof dish. Steam 20 minutes. Serve hot.
  • Alternatively, remove ends from melons. Scoop out seeds and pulp.
  • Fill melons with filling and steam 20 minutes. Cut into 2 cm slices.


  • 6 medium bitter melons


  • 500 grams soft bean curd or canned gluten, finely chopped
  • 2 tablespoons black beans, chopped
  • 1 teaspoon chopped garlic
  • 1 teaspoon salt
  • 2 tablespoons light soy sauce
  • 2 tablespoons dry sherry
