LENTIL AND TOMATO SOUP (SOUPE DE LENTILLES AUX TOMATES)

Preparation Method :

  • Add the onions, carrots, celery and garlic in a pot with oil.
  • Cook for 10 minutes or until the vegetables colour changes. (Keep stirring in betwen).
  • Add the vegetable stock or add the water and stir in the bouillon cubes, making sure they dissolve completely.
  • Add the lentils, canned tomatoes, and bouquet garni.
  • Bring to a boil, and then reduce the heat.
  • Cover partially with a lid and then cook for at least 35 minutes or until the lentils are tender.
  • Now stir in the champagne vinegar and season to taste with salt and freshly ground pepper.
  • Serve it immediately.

INGREDIENTS

  • 3 onions (peeled and chopped)
  • 5 carrots (sliced in rounds)
  • 3 stalks celery (chopped)
  • 3 cloves garlic (peeled and minced)
  • 50 ml Cooking oil
  • 1.2 litre vegetable stock (or water and bouillon cubes)
  • 500 grams uncooked French green lentils
  • 400 grams diced tomatoes
  • 1 bouquet garni
  • 2 tablespoons champagne vinegar
  • Salt and pepper as per taste
