SPLIT PEA SOUP (CREME DE PETITS POIS)

Serves :

Preparation Time :
4 hours

Cooking Time :
2 hours

Preparation Method :

  • Cook the onion in butter.
  • Now add drained split peas.
  • Cover with water and simmer for 1 ½ hours.
  • Add the frozen peas to give colour.
  • Add cream to the above mixture. Cook for few minutes.
  • Filter through a very fine strainer, mashing the solid part.
  • Season the soup with chopped sorrel, nutmeg, salt and pepper.
  • Serve it hot.

INGREDIENTS

  • 150 grams chopped onions
  • 2 table spoon butter
  • 2 cloves of garlic (minced)
  • 250 grams split peas (soaked in water for four hours)
  • 150 grams frozen green peas
  • 50 grams sorrel
  • 300ml cream
  • Salt, pepper and nutmeg for garnishing
